The tourmanent has four entries. Chienese is represented by Chen. The other three (Italian, Japanese, and French) are selected by a preliminary round of competitions. 308 applications were received, and 30 were selected by photographs of their dishes.

He was destined to succeed the restaurant, but he left the place at age of 18 and apprenticed in Kyoto. (Note: In Japan, western (Osaka and Kyoto) cuisine is very different from eastern (Tokyo))
